Newly
opened in the summer of 2005, MadderLake Cafe, located in the heart of
the Finger Lakes Wine Country, has already become a favorite among the
area's food and wine enthusiasts, both locals and visitors alike.
MadderLake is owned and
operated by chef Scott Snyder and
manager- and-sommelier Laura Kudla, both of whom, before moving to the
Finger Lakes Region in 2004, held key management positions in a number
of notable restaurants in Northern California's wine country.
Laura and Scott describe the
food at MadderLake as "Finger Lakes Wine
Country fare, drawing inspiration from American regional
styles".
Scott seeks out the best quality raw materials available—
fresh
Dungeness crab and cold-smoked sturgeon from California, sashimi-grade
tuna from Hawaii, organic heirloom grits and polenta from Anson Mills
in South Carolina, for example—and puts particular emphasis
on
sourcing Finger Lakes produce, organic when possible, from small farms,
local artisanal cheeses, and other local farm products.
Laura's wine list, though
modest in scale, is very carefully selected,
and features not only the best of the Finger Lakes, but also excellent
off-the-beaten path selections from California, the Pacific Northwest,
and around the world.
In spite of their ambition to
provide first-quality food and service
and a singular aesthetic, Laura and Scott nevertheless prefer to regard
MadderLake as a very personal "mom-and-pop" effort. Scott is
in
the kitchen all day every day, and performs the lion's share of the
cooking duties, and Laura, in addition to attending to the
behind-the-scenes business matters, also greets nearly each and every
guest, and personally waits on many.
